Recipe for Eng dumplings & more

Other traditional specialities are available in the farmers’ shops, yard-sales and on the farmers’ markets in our Region.

Recipe for Eng dumplings:

you need:
150 g Enger Almkäse (Alpine cheese from Eng)
300g old white bread
4 eggs
1/8 l milk
1 onion
salt
parsley
100 g butter
60 g flour

Cut the brad in little cubes. Mix eggs and milk together using a fork. Add some salt and pour onto the bread cubes. Cover it and let the bread absorb the “egg milk” for about 30 minutes
In the meanwhile chop the onion and roast it in a pan with butter until it is golden brown. Cut the cheese in very little cubes and add it to the bread mix together with the onion, the butter which remains in the pan, flour and finely chopped parsley. Mix it properly and form 8-10 dumplings. Put them in boiling salted water and wait 15 minutes.
The first dumpling can be tasted with a flavoured beef soup.
The second one can be served with sauerkraut.
And the third one with green salad.

And if there is a dumpling left, just cut it in slices, roast it in some butter and serve it with a fried egg.
